Egg Taco

I am sitting in from of my computer wondering what to blog about. I was hungry so I made some breakfast and as I am eating it I decided I would share what I’m having.

Since I have been gaining weight all winter I have put myself on a “eat better” diet. So while I really wanted eggs, bacon and pancakes with hash browns for breakfast I settled on something just as yummy which required less work mind you.

There are 4 ingredients in this recipe.

  1. 2 eggs
  2. whole wheat soft tortilla
  3. salsa
  4. cheddar cheese

Cook eggs in frying pan. I used a tiny bit of olive oil because my non-stick  pan is a lie. I just cooked my eggs over-easy but you can scramble if you like also.

Place cooked eggs on tortilla. Add about 1/4 cup of salsa and some cheddar cheese. I didn’t even shred my cheese because I didn’t want to dirty my shredder. I used a thin slice that I broke into little pieces and spread them out along the eggs. Can you say lazy?

Fold in the ends of the tortilla and roll up. Eat.

There you have it. So simple but so yummy. I started eating it and then thought about taking a picture but a half eaten egg taco looked a little gross. Needless to say I am not including a picture but next time I will try and hold off eating something until I take a picture. Ha ha.

  1. Haha I made breakfast burritos Saturday! Decided it was a new format for eggs at least. I scrambled the eggs and melted a slice of cheese on top (still no shredding). I did add some crumbled bacon. And jalapeno hot sauce. Was delicious!
