With an abundance of squash, eggplant, and colored bell peppers coming out of my garden I decided to make grilled veggie sandwiches.
I sliced up some eggplant, yellow squash, zucchini, orange peppers and red onions. I placed the slices in a large bowl and added some green beans I also grabbed from the garden. I mixed in some olive oil, oregano, rosemary and thyme.
I don’t have a bbq grill so I grilled the vegetables in a pan on the stove. I have one with ridges so it makes those lovely grill marks. I made a lot so I could put some in the fridge for use on another day too. The veggies are better warm on this sandwich so when I make another sandwich a few days later I warm them in a pan first.
Next I decided to use the fresh herbs I have growing in the garden as well. I picked some oregano, rosemary, basil, thyme and parsley.
I chopped up the fresh herbs and added them to some mayonnaise along with a few dashes of cayenne pepper.
I had found these great whole grain ciabatta rolls and thought they would be perfect for this sandwich, although it is also great with french bread. I spread some of the mayo and piled on the veggies. I also added a little lettuce greens and voila. Yum City!
That’s it. It is so delicious. You can also add cheese if you like. A slice of smoked gouda perhaps or provolone and you’re in veggie sandwich heaven.
